Low-Histamine Whole Beef Share — Non-Aged, Flash-Frozen Grass-Fed Beef

Go all-in on Big Island, 100% grass-fed & grass-finished beef — processed on our low-histamine protocol so your freezer stays stocked for months without the histamine load that comes from standard aging.

Unlike our standard shares, this beef is never dry-aged. We let the carcass complete rigor mortis, then cut, vacuum-seal, and flash-freeze immediately — built for customers managing histamine intolerance or MCAS who need beef processed on a shorter timeline.

Note: because this protocol skips the aging period that develops deeper flavor and tenderness, expect a milder, leaner eating experience than our standard dry-aged shares. This is a deliberate trade-off for histamine sensitivity, not a quality difference.

As with any dietary approach for managing a health condition, we recommend working with a trusted medical provider familiar with histamine intolerance or MCAS.

We skip grinding for low-histamine orders because the increased surface area speeds histamine formation, however if you would like some please let us know.

How to reserve your whole steer

1. Reserve your share with a $1,500 deposit
Your deposit is applied to your final balance (estimated $9,000 for ~430 lbs)

2. Review your cut sheet
We’ll email you our standard cut sheet so you know exactly what to expect. You can note simple preferences like steak thickness (and a few other small processing notes).

3. Pickup or statewide shipping
After processing, we’ll reach out to schedule farm pickup or coordinate shipping and send your final invoice.

Note: Checkout may display “pickup only,” but we do ship whole steers statewide.

Pickup & shipping dates

Choose your Pickup/Ship Date from the dropdown before adding to cart.

Farm pickup: Pickup is at the farm. About a week before your pickup date, we’ll email you an online sign-up sheet to select your pickup time.


Shipping: Orders ship FedEx Next Day and arrive the next day to your doorstep. Please enter a physical address at checkout—we cannot ship to PO boxes.

Tip: If you’re ordering multiple items, choose the same date so everything goes out together.

Freezer space & storage tips

How much space do I need?

A solid rule of thumb is 1 cubic foot of freezer space = about 35–40 lbs of packaged meat

  • 430 lbs needs about 14–16 cu ft freezer space  

Real life tip: if your freezer is already part-full, plan on 21 cu ft so it stays easy to stack and find things.

Storage best practices (easy wins):
Keep your freezer at 0°F / -18°C.

Freeze it fast: get everything into the freezer the same day you receive it.

Organize by type (ground / roasts / steaks) so you’re not digging with the door open.

Use a small bin or basket for use first” items.

Write the date received on the outside if you want quick rotation.

How long will it last?

If it stays frozen solid, it’s safe for a long time. Quality is best when you rotate through it within 12 months.

FAQ

Can I request specific cuts?

We keep shares consistent for everyone, so we can't guarantee special requests. One exception: for our low-histamine protocol, we skip grinding by default and include boneless stew instead — this keeps surface area lower, which slows histamine formation. If you'd prefer ground beef instead, just leave a note at checkout and we'll do our best.

How is the beef packaged?

Everything is vacuum-sealed and labeled. It's freezer-ready and easy to organize.

Where is pickup?

Pickup is at the farm on the Hiloside of the island, in Pepeekeo/Honomu. About a week before pickup, we'll email to coordinate pick-up.

Can I send someone else to pick up for me?

Yes. Just forward them your pickup details and have them give your name at pickup.

What if I add other items to my order?

We'll bundle everything together so it's ready/shipped on the Pickup/Ship Date you selected — as long as those add-on items are available for that same date. If something has a different harvest or processing timeline (like a half pork share), it may need a later pickup/ship date. If that happens, we'll reach out with options (move the date, split the order, or swap the add-on).

Is the beef fresh or frozen?

Shipped orders arrive frozen. Pickup orders are packaged freezer-ready. For our low-histamine shares, we process and freeze quickly to limit histamine buildup — many customers freeze everything right away regardless, which we'd especially encourage here.
