1 beef tongue (about 2–3 pounds)

1 onion, roughly chopped

3 cloves garlic, minced

2 bay leaves

1 tsp whole peppercorns

1 tbsp salt

4 cups beef broth or water

Method

Cook in the Instant Pot or Slow Cooker

Instant Pot Method:

  • Place the beef tongue in the Instant Pot, adding onion, garlic, bay leaves, peppercorns, and salt.
  • Pour beef broth or water over the tongue. It does not need to be fully submerged.
  • Secure the lid and set the valve to sealing.
  • Cook on high pressure for 60–75 minutes (60 minutes for smaller tongues, 75 minutes for larger ones).
  • Once cooking is complete, let the pressure naturally release for 15 minutes, then manually release any remaining pressure.

Slow Cooker Method:

  • Follow the same ingredient preparation as above.
  • Ensure the tongue is fully submerged in broth or water.
  • Cover and cook on low for 8–10 hours or until tender.

Peel and Slice

  •  Carefully transfer the cooked beef tongue to a cutting board.
  • While still warm, peel off the tough outer skin—it should come off easily.
  • Slice thinly across the grain for the most tender texture.
