Ingredients
3–5 lbs grass-fed beef bones (knuckle bones, marrow bones, joint bones, or a mix. Roast them for a richer flavor, keep raw for a milder taste)
2 TBS vinegar (apple cider or any of the Sour Flower vinegars)
water (enough to fully cover bones)
1 TBS sea salt
Optional: fresh parsley, thyme, ginger, onion, carrots, celery, garlic, bay leaves, peppercorns, any other seasonings you like.
Method
1. Roast the Bones (Optional but Recommended)
Preheat oven to 400°F.
Roast bones for 30–40 minutes until deeply browned. This builds richer flavor and color.
2. Build the Pot
Transfer roasted bones to a large stockpot or slow cooker. Add vegetables and herbs if using, and vinegar.
The vinegar helps extract minerals from the bones — don’t skip this step.
3. Add Water
Cover everything fully with water. Then add your salt.
4. Simmer Low & Slow
Bring to a gentle boil, then immediately reduce to a very low simmer.
Skim foam during the first hour.
Simmer:
- 12–24 hours on the stovetop
- 18–24 hours in a slow cooker (LOW setting)
- 3 hours in an Instant Pot (high pressure)
Low heat and patience are key to making a truly collagen-rich bone broth.
5. Strain & Cool
Strain through a fine mesh sieve.
Let cool. Refrigerate.
If your broth gels in the fridge, that’s a good sign — it means the collagen has been properly extracted.
