Easy Chuck Steak Recipe: A Simple, Flavorful Dinner

Easy Chuck Steak Recipe: A Simple, Flavorful Dinner

This Easy Chuck Steak Recipe is perfect for quick weeknight dinners. With minimal prep, this dish comes together effortlessly—just sear the steak, pop it in the oven, and let the magic happen! This recipe works equally well for chuck roast, with slight adjustments to cooking time and pan size.

For best results, we recommend using a cast iron skillet (like our favorite from Field Company—support the farm through our affiliate link!) to achieve a perfect sear and rich, braised flavors. Chuck steak and chuck roast, often referred to as 7-bone steaks or roasts, are included in some of our beef shares and specialty bundles, making it easy to cook with high-quality, grass-fed cuts.

Don’t forget to pair this recipe with homemade beef broth made from our Bone Stock-Up, for a flavorful base you can sip or cook with—free of chemicals and full of nutrients.

Ingredients

1–2 lbs chuck steak or small chuck roast

2 tbsp tallow

Salt and pepper, to taste

2 cloves garlic, minced

1 onion, sliced

1 bell pepper, sliced (optional)

1 cup beef broth

2 tbsp Worcestershire sauce

1 tbsp soy sauce

1 tsp dried thyme

1 tsp paprika

1 tsp garlic powder

Fresh parsley, chopped (optional, for garnish)

Method

Season and Sear

  • Generously season the chuck steak with salt and pepper on both sides.
  • Heat tallow in a large cast iron skillet over medium-high heat.
  • Once hot, add the steak and sear for 3–4 minutes per side until browned.
  • Remove the steak and set it aside on a plate.

Sauté the Vegetables

  • In the same skillet, add minced garlic, sliced onion, and bell pepper (if using).
  • Cook for 3–4 minutes until softened and fragrant.

Build the Sauce

  • Pour in beef broth, Worcestershire sauce, soy sauce, dried thyme, paprika, and garlic powder.
  • Stir well to combine and bring to a simmer.

Braise the Steak

  • Nestle the seared steak into the sauce and vegetables.
  • Reduce the heat to low, cover with a lid, and simmer gently for 1–1.5 hours, or until the steak is tender.

Rest and Serve

  • Once cooked, remove the steak and let it rest on a cutting board for a few minutes.
  • Slice the steak against the grain into thin strips for maximum tenderness.
  • Serve with sauce and vegetables spooned over the top. Garnish with fresh parsley if desired.
