Ingredients

1 beef neck
2 tbsp olive oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
2 cups beef broth
1 cup red wine (optional)
2 bay leaves

1 tsp dried thyme

Salt and pepper to taste

2 tbsp all-purpose flour (optional, for thickening)

Fresh parsley, chopped (optional, for garnish)

Method

1. Brown the Beef Neck

Heat olive oil in a large skillet over medium-high heat. Brown the beef neck on all sides, about 5 minutes per side, to lock in flavor. Transfer to the slow cooker.

2. Sauté the Vegetables

In the same skillet, add diced onion, carrots, and celery. Cook until softened, about 5 minutes. Add minced garlic and cook for an additional minute. Transfer vegetables to the slow cooker.

3. Build the Stew

Pour beef broth and red wine (if using) into the slow cooker. Add bay leaves, dried thyme, and season with salt and pepper. Stir to combine.

4. Cook Low and Slow

Cover the slow cooker and cook on low for 6–8 hours. The beef neck will become tender, and the meat will fall off the bone.

5. Optional Thickening

If you prefer a thicker stew, mix 2 tablespoons of flour with water to create a slurry. Stir it into the stew during the last 30 minutes of cooking.

6. Final Touches

Once cooked, remove the bay leaves and discard them. Taste and adjust seasoning as needed. Garnish with chopped parsley, if desired.
