Lemongrass Ginger Lemonade
Fresh young ginger, with its thin papery skin and pink tips is tender and wonderfully fragrant especially when paired with lemongrass in this Lemongrass Ginger Lemonade recipe. The flavor of lemongrass and ginger comes from a honey based simple syrup that can easily lend itself to cocktails as well as lemonade or limeade. We start with a base of our raw honey for the simple syrup but you can also use sugar. Homemade lemonade is refreshing and easy to make, especially for our Sugar Hill Farmstead vegetable CSA members who received lemons, lemongrass and ginger with their last delivery! Lemongrass Ginger Simple Syrup
2 cups honey (can also substitute 2 cups sugar)
2 cups water
1-2 stalks of lemongrass, chopped
1 finger’s worth of ginger (approximately 3 inches), chopped
Lemonade
1 cup lemon juice
1/2 cup Lemongrass Ginger simple syrup
3 cups water
Ice
Lemongrass Ginger Lemonade
Place honey, water, chopped lemongrass and ginger into a small pot. Bring to a simmer, the lemongrass and ginger will become fragrant. Stir so honey is completely dissolved. Remove from heat and strain. Juice your lemons while the syrup is cooling. Combine lemon juice, lemongrass ginger simple syrup, and water into a pitcher and stir. (You can also just eyeball it into your ice filled glass). You can adjust your juice:syrup:water ratios depending on taste.
