Meat Loaf Recipe with Beef and Pork

I grew up listening to records from my parent's eclectic record collection. I remember putting on a Meat Loaf album when we were cleaning up around the house–playing air guitar with the vacuum and my sister on tambourine with the feather duster. We didn't get much accomplished, but we sure had fun. 

Most likely, we also played Meat Loaf when we were about to eat meatloaf because that's the kind of family we are. The best meatloaf recipes include ground beef, ground pork, and ground veal. I've chosen to omit the ground veal and found that our ground beef and ground pork make for a meatloaf that will have you singing, "I would do anything for" meatloaf! 

Ingredients

  • 1 lb Sugar Hill Farmstead ground beef

  • 1 lb Sugar Hill Farmstead ground pork

  • 1 clove garlic, finely chopped

  • 3 tablespoons onion, finely chopped

  • 3 tablespoons celery, finely chopped

  • 3 tablespoons fresh parsley, finely chopped

  • 1 large egg

  • 1/2 cup milk

  • 2/3 cup unseasoned dry breadcrumbs

  • 1-1/2 teaspoons salt

  • 1/2 teaspoon freshly ground black pepper

  • 1/4 cup ketchup

  • 1 teaspoon Worcestershire sauce

Method

Preheat your oven to 350°F. Then place ground beef and ground pork in a large mixing bowl. Add the garlic, onion, celery, and parsley, but don't mix them together yet. In a separate bowl, whisk egg and milk together until blended, then add the breadcrumbs, salt, and pepper. Stir the egg mixture to combine until smooth like a thick pancake batter. Add an extra tablespoon or two of milk if it's too pasty. Now, add the egg mixture to the meat and fold together gently with a spoon or spatula. For best results, don't over mix. Coat a loaf pan (9-1/2 x 5-1/2-inch) with a bit of coconut oil or non-stick spray. Then put the meatloaf mixture into the pan, gently tamping it down and smoothing the top, so the meatloaf cooks evenly. Bake for 40 minutes. While the meatloaf is baking, mix the Worcestershire and ketchup in a small bowl. Once the meatloaf has cooked for 40 minutes, glaze the top of the loaf with the mixture. You can spoon it on or use a brush. Bake for a final 15-20 minutes until the ketchup is set and the internal temp of the meatloaf reaches 155°F. Let the meatloaf cool outside the oven for a quick 5 minutes to let it set before slicing. Enjoy!
