garlic & Rosemary Lamb Chops
Take your favorite style of lamb chops- loin, shoulder, or rib chop- and turn them into a garlic and rosemary chop you’d swear came from a 5-star restaurant. Lamb chops cook in about 5 minutes making this a decadent meal that comes together in no time.
Ingredients
4 lamb chops
kosher salt, for seasoning
black pepper, for seasoning
1 TBS minced garlic
2 tsp chopped rosemary
¼ cup extra-virgin olive oil, divided
Method
Season both sides of the lamb chops well with salt and pepper. Mix garlic, rosemary, and 2 tablespoons of olive oil in a bowl. Rub this mixture on the chops and let them marinate for at least 30 minutes at room temperature, or overnight in the fridge.
Heat a large cast-iron skillet or frying pan over medium-high heat and add 2 tablespoons of olive oil. Once hot, add the lamb chops and sear for 2 to 3 minutes until browned. Flip the chops and cook until they reach an internal temperature of 125°F (51°C) for medium-rare or 135°F (57°C) for medium, which takes about 3 to 4 minutes. Let the chops rest for 10 minutes before serving. Enjoy!
