Farm-to-Table Thanksgiving Recipes

This Thanksgiving we’re celebrating all things Big Island with local meat and produce from the Sugar Hill Farmstead CSA. I’ve compiled a list of our top 10 farm-to-table recipes for a memorable Thanksgiving dinner.

Appetizers: Farm fresh

We usually eat around 4pm so having some light snacks that don’t need to be refrigerated is our way of staving off hunger but not filling up before dinner.

A nip of Koloa Dark Rum made on Kauai, with local organically grown sugar cane juice (from our CSA member shop) with a splash of lemongrass ginger simple syrup is a refreshing accompaniment to the day.

Main: Pasture raised

A pasture raised heritage turkey is a showstopper but finding one can be difficult. Most farms require you to reserve a turkey months in advance, so if you’re late to the game you’re out of luck. The good news is a roasted pasture raised chicken is delicious, and arguably more flavorful and juicy than a turkey. Roasting in a cast iron skillet, like the #12 from Field Company, looks great on a table and ensures crispy skin (the best part!)

Sides: Local shines

These sides made with local ingredients may steal the show. Don’t forget to add the Kulina Lani Organic Sourdough Bakery rolls to the table served warm with local ghee . Ulu stuffing is something we’re really into, sub the ulu for bread in your traditional recipe or see the recipe below for something different.

Dessert: Locally sourced

Thanksgiving wouldn’t be complete without pie. Pumpkin, cherry, apple, or maybe a little of all three? Regardless of what type of pie is your favorite, there’s one thing for certain; the crust makes the pie. Our favorite Thanksgiving pies all start with a crust made with lard. Finish off Thanksgiving with a cup of local coffee, a slice of pie, and a scoop of apple crisp.
