Beef Neck stew

This slow cooker beef neck stew is hearty, flavorful, and perfect for a cozy dinner at home. You can adjust the time for your Instapot, too. Beef neck is one of those cuts that is super intimidating to people but once they try it are totally hooked! And, it’s really hard to mess up. As it cooks, the meat tenderizes with all that yummy connective tissue. Plus, the collagen from the neck bones and cartilage breaks down into a nutrient-dense broth.

Ingredients

1 beef neck

2 tablespoons olive oil

1 onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

2 cups beef broth

1 cup red wine (optional)

2 bay leaves

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons all-purpose flour (optional, for thickening)

Chopped fresh parsley for garnish (optional)

Method

Heat the olive oil in a large skillet over medium-high heat. Add the beef neck and brown on all sides, about 5 minutes per side. Transfer the browned beef neck to the slow cooker. In the same skillet, add the diced onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes. Add the minced garlic and cook for an additional minute. Transfer the cooked vegetables to the slow cooker with the beef neck. Pour the beef broth and red wine (if using) into the slow cooker. Add the bay leaves and dried thyme. Season with salt and pepper to taste. Cover the slow cooker and cook on low for 6-8 hours, or until the beef neck is tender and falling off the bone. If you prefer a thicker stew, you can make a slurry by mixing 2 tablespoons of all-purpose flour with some water until smooth. Stir the slurry into the stew during the last 30 minutes of cooking. Once the beef neck is cooked, remove the bay leaves and discard them. Taste the stew and adjust the seasoning if necessary. Serve the beef neck stew hot, garnished with chopped fresh parsley if desired. Pair with crusty bread or over mashed potatoes for a comforting meal. Enjoy!
