Instant Pot Beef Tongue

A hidden gem prized for its rich flavor and tender texture. Located in the head region of the cow, the tongue is absolutely delicious. For a melt-in-your-mouth experience, I recommend cooking tongue in a pressure cooker (like Instant Pot) or slow cooker in broth until tender, then slicing it thinly for sandwiches or tacos.

INGREDIENTS

1 beef tongue (about 2-3 pounds)

1 onion, roughly chopped

3 cloves garlic, minced

2 bay leaves

1 tsp whole peppercorns

1 Tbs salt

4 cups beef broth or water

Method

Rinse the beef tongue under cold water. Place the beef tongue in the Instant Pot along with the chopped onion, minced garlic, bay leaves, whole peppercorns, salt, and any additional seasonings you'd like to use. Pour the beef broth or water over the beef tongue If using a slow cooker, ensure the tongue is fully submerged, it is not as necessary in a pressure cooker. Secure the lid on the Instant Pot and set the valve to the sealing position. Cook on high pressure for 60-75 minutes, depending on the size of the beef tongue. For a smaller tongue, aim for 60 minutes, while larger tongues may require up to 75 minutes. Once the cooking time is complete, allow the pressure to naturally release for about 15 minutes before manually releasing any remaining pressure.

Carefully remove the beef tongue from the Instant Pot and transfer it to a cutting board. Now peel off the tough outer skin. It should peel off easily after cooking. Slice the beef tongue thinly across the grain and serve warm as desired. You can enjoy it on its own, use it in tacos, or pair it with grainy mustard and horseradish on a sandwich. Enjoy!
