Ingredients
1 pound ground pork
2 medium bok choy, finely chopped
2 cloves of garlic, minced
1 TBS fresh ginger, grated
2 tsp soy sauce
1 TBS oyster sauce
1 TBS hoisin sauce
1 TBS rice vinegar
1 tsp sesame oil
2 TBS coconut oil
Salt and pepper to taste
Optional toppings: sliced green onions, sesame seeds
Method
Gather and prepare all ingredients: chop bok choy, mince garlic, and grate ginger. Having everything ready will make the process go quicker. In a large skillet or wok, heat the coconut oil over medium-high heat. Add the ground pork and cook until browned and cooked through, breaking it up into small crumbles with a wooden spoon. This should take about 5-7 minutes. Add the minced garlic and grated ginger to the skillet with the cooked ground pork. Stir fry for about 1 minute until fragrant. Add the bok choy to the skillet and toss with the ground pork. Cook for 5-7 minutes, stirring occasionally until the bok choy is tender. In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, rice vinegar, and sesame oil. Pour the sauce over the stir fry and stir well to coat all the ingredients. Season with salt and pepper to taste. Transfer the savory ground pork and cabbage stir fry to a serving dish. Garnish with sliced green onions and sesame seeds if desired. Serve hot with rice. Enjoy!
P.S. Add your favorite vegetables to the stir fry. Bell peppers, carrots, mushrooms, cabbage or snow peas enhance color and texture. Spice it up with some hot pepper, too!
