Chuck Steak
Let’s talk chuck steak for a moment. Chuck steak is a seriously underrated cut of beef that is making a comeback as more and more people are buying beef shares. What is Chuck Steak
Chuck steak is cut from the chuck- the large section of meat from the shoulder area. The shoulders get a lot of exercise, especially with grass-fed beef. There are several different intersecting muscles that can cause the grain of a chuck steak to change several times in a single cut. When cutting your beef chuck steak pay close attention to the grain of the meat- if you see muscle running sideways cut against the grain for a tender juicy steak.
Cooking Chuck Steak
Chuck steak is a versatile cut of beef- braised, grilled, or pan seared in a cast iron skillet- it all tastes great. Braise chuck steak the same way you would a chuck roast with wine and herbs in a dutch oven, grill like you would a rib steak, or toss it into a hot skillet like you would filet, it doesn’t matter- your chuck steak will be flavorful and delicious. One of the most important steps in cooking grass-fed beef is bringing it to room temperature before cooking. Season with a little salt and pepper as it comes to room temperature and you’re ready to go. Remember to allow your meat to rest for about 5 minutes before slicing!

Ingredients
Chuck steak
Salt
Pepper
Ghee or butter
Cover both sides of the steak with the salt and pepper. Allow to come to room temperature (approximately 30-45 minutes). Heat cast iron skillet large enough to fit the chuck steak or heat up your grill. Cook one side for 8 minutes, flip and place 1 tsp of butter or ghee on top, cook for another 8 minutes. Remove from pan. Rest on cutting board for 5 minutes. Slice and enjoy!
