30-minute Broccoli Cheese Soup

I whipped up a batch of broccoli cheese soup the other night out of everything I had in my fridge. We had just bought a ton of locally grown broccoli, and I can say that even the stems are sweet! We also picked up a big handful of baby carrots from the same farm. We always have a few mason jars full of grass-fed pastured bone broth, you can too with our bone stock up bundle, and a fresh gallon of raw goat milk. Other recipes call for cream or half & half, but with fresh raw milk, it’s nice and creamy naturally. With night chores done, I just wanted to relax so in 30-minutes dinner was on the table and relaxing commenced! Pair with a pasture raised pork chop and a slice of the best bread for a ridiculously easy dinner.
Ingredients
1/4 cup melted butter
1/2 medium onion, chopped
1/4 cup all-purpose flour
2 cups fresh milk (or half&half)
2 cups stock or broth (chicken or pork works best)
1/2 lb broccoli, (about 3 cups), chopped into bite-sized pieces, even the stem!
1 cup carrot, chopped
2 cups sharp cheddar cheese, grated
2 small potatoes, chopped (optional)
salt and pepper
Method
Melt the 1/4 cup butter and sauté the onions in it until soft. Sprinkle the flour over the mixture. (Add potatoes here if using). Cook and stir over medium heat for 1-2 minutes. Whisk in the milk and bone broth. Add the broccoli and carrots. Cook over low heat for 20-25 minutes or until the broccoli and carrots are tender. Add salt and pepper to taste and add the cheese. Stir to combine and turn off the burner and let the cheese melt for a few minutes then serve. For a lighter option, add a little shredded cheese to your bowl instead of the whole soup. Enjoy!
